We are so proud and excited to be able to offer this incredible honey for sale. Handcrafted in the Champlain Valley of VT, this honey is very different from most honey available, even the certified organic honey. Why? Well, for a number of reasons. One, the bees themselves are never given any additives or “pseudo food” like sugar water, high fructose (GMO) corn syrup, pollen substitutes, or antibiotics. They are housed in top bar hives, not the traditional Langstroth hives, which are really not designed for bees so much as for beekeepers. The honey is gently extracted by hand, and is never heat treated, which, although it makes for messy honey packing, also makes for an enzyme rich, “living food” complete with its own healthy herd of microbiology. The raw honey is never filtered, and contains traces of pollen, propolis and wax. This makes for a very special, and exceptionally healthy honey.
This particular batch of honey, from 2010, has an 18% moisture content, which makes for a very “creamy” honey, with a delicious, rich nose of clover, lavender, apples and even lemon.

Our honey, in addition to being raw, unfiltered and unheated, is only packed in glass bottles with metal caps, never plastic.We hope to be able to offer our own treatment free honey in 2012, after our bees are settled and producing enough honey to allow us to harvest some.
